Young garlic is an excellent, short-term seasonal specialty that you should definitely try. As the name suggests, it is an early harvest of drumsticks with not yet developed cloves.

The taste of young garlic is fresh and delicate, you can use it raw, similar to spring onions, in salads and spreads. It is also excellent baked in the oven. Peel the tougher skins, if necessary, remove the stiff part of the stem from the center of the drumstick. Drizzle with olive oil, season with salt and pepper and bake until golden until the garlic is soft. Together with fresh bread or toast, and perhaps a piece of goat cheese, it tastes great. You will also appreciate it with roasted meats.
