Baby kale has a much milder flavor and more tender texture than large kale.
We use baby cabbage whole to prepare dishes, we do not have to remove the outer leaves. We do not cut it. We boil, bake or stew the whole head. It tastes best topped with a mild sauce as a side dish for meat.
