Buffalo hearts are some varieties of tomatoes. These include both ordinary varieties and F1 hybrids (hybrids of clean lines) and all of them are characterized by their large volume, interesting shape and, above all, excellent taste. These tomatoes commonly grow to a weight of up to half a kilogram. Their shape is usually spherical-flattened with distinctive ribbing. However, some specimens of buffalo hearts can also be pear-shaped or resemble several fused fruits. Their color is usually deep red when fully ripe, but there are also pink cultivars. The consistency of buffalo hearts is less watery than that of ordinary tomatoes, while their flesh remains juicy. The seeds of buffalo hearts are very small and rather scattered in the pulp. The taste of these tomatoes is very intense, balanced sweet and sour and strongly aromatic.
Buffalo heart tomatoes are suitable wherever a strong tomato taste and aroma is needed. They are suitable for cold and hot dishes, they are great for salads, cold and hot tomato soups, tomato sauces and any type of meat. They are also suitable for minced meat mixtures for filling lasagna, cannelonne and other baked pasta, complement baked potatoes and, last but not least, they can be used in lecho and similar vegetable mixtures. Canned buffalo hearts are an excellent and tasty semi-finished product for preparing sauces and soups. This great variety of tomatoes can also be used to prepare the base for pizza as well as pizza can be covered with them. Due to their dense consistency, buffalo hearts are also one of the most suitable varieties for drying and subsequent pickling in oil.
Buffalo hearts are usually sold ripe, but it is good to let them taste perfect for a few days. They will last in the refrigerator for a relatively long time, just like other tomatoes.
Tomatoes, along with potatoes, came to Europe after the discovery of America. They first found their use in Italian and Portuguese ornamental gardens. Later, their taste began to be appreciated rather than their dull appearance and they spread throughout Europe. All varieties of tomatoes are rich in vitamin C and carotene. They are also a source of minerals, especially chromium and potassium, and are characterized by a high proportion of fiber. Tomatoes promote hematopoiesis, hair and nail growth. The high content of antioxidants supports the cleansing of the body, and due to their low energy content, their consumption is suitable for weight loss diets. Buffalo hearts are mostly grown in the Mediterranean, where they are also widely consumed and are part of many local recipes.
