Rabbit, Sort Of
prepared for Titbit by: Oh My Chef
Just about everyone loves pulled meat. We used rabbit this time, but pork works great for this recipe, too. We borrowed the pancake from Indian cuisine and marinated the meat in the Asian way. It’s just like that!
Ingredients for for 2 people
- 2 rabbit legs
- 1 tablespoon smoked paprika
- 1 tablespoon dried oregano
- 1 clove of garlic
- 1 tablespoon dried chilli
- 1 teaspoon dried ground coriander
- 1 tablespoon soy sauce
- 3 tablespoons of Ciburger (you can get it at Rohlík or in Makro stores in Prague)
- salt, pepper, oil
Piest
- 250 g whole wheat flour (or plain)
- 110 g water
- 1 tablespoon oil, salt
To fine-tune
- 1 tomato
- 2 sprigs of coriander
- 2 tablespoons sour cream
- lime
Method
- First, marinate the rabbit. Cover the whole thighs with all the spices and drizzle with soy sauce and oil.
- Let it marinate at least overnight.
- Put the meat in a saucepan (including the marinade) and cover with water. Cook until it is completely soft and the water has almost evaporated.
- Tear the meat into smaller pieces and season if necessary.
- Make a dough from flour, water, salt and oil. It is ideal to use your knuckles on your hands and press slowly. It is better to oil your hand a little.
- Let it rest for 20 minutes wrapped in cling film or a plastic bag. Then make smaller balls and roll them into thin pancakes using a rolling pin. We don’t have to skimp on flour.
- Dry fry in a pan, it only takes a few minutes.
- Cut the tomato in half and take out the seeds, then cut into pieces. Drizzle the whole thing with lime and add a teaspoon of sour cream.
- Garnish with coriander and serve.
- Enjoy your meal!
